Quinoa Berry Breakfast Bowls
Quinoa is a delicious change of pace from other hot cereal breakfasts. You can top it with your favorite fruit. For a vegan variation, replace the honey with a little maple syrup.
In medium saucepan, mix 2 cups of the almondmilk, quinoa and salt with a wire whisk. Bring to a boil; reduce heat. Cover and simmer 15 minutes. Stir; cover and let stand until all liquid is absorbed.
Spoon into bowls. Pour a little of the remaining almondmilk over the quinoa. Top with berries and drizzle with honey.
- 2½ cups Almond Breeze Original almondmilk; divided
- 1 cup quinoa; rinsed and drained
- ¼ tsp. salt
- ½ tsp. vanilla
- ¾ cup fresh blueberries
- ¾ cup fresh raspberries
- 3 whole strawberries
- 3 Tbsp. honey
