This hearty egg dish is so quick and easy to prepare you can serve it on a weekday morning. Just 15 minutes of prep and you can get the family ready for the day while it bakes. The eggs stay warm for a while, so family members can eat at different times.

  1. Heat oven to 350°F. Spray 11”x7” baking dish with cooking spray.

  2. In small skillet, heat olive oil over medium-high heat. Stir in pepper and onions. Cook 3 to 4 minutes or until tender. Spoon into baking dish.

  3. In large bowl, beat eggs, almondmilk, salt and pepper. Pour over vegetables. Bake 20 to 25 minutes or until knife inserted near center comes out clean. Cut in squares to serve.


  • 1 Tbsp. extra virgin olive oil
  • 1 cup diced bell pepper; any color
  • 3 large green onions; chopped
  • 10 eggs
  • ¾ cup Almond Breeze Unsweetened Original almondmilk
  • ½ tsp. salt
  • ¼ tsp. pepper
