Ingredients

  • 1 cup quinoa; rinsed and drained
  • ¼ tsp. salt
  • ½ tsp. vanilla
  • ¾ cup fresh blueberries
  • ¾ cup fresh raspberries
  • 3 whole strawberries
  • 3 Tbsp. honey

Directions

  1. In medium saucepan, mix 2 cups of the almondmilk, quinoa and salt with a wire whisk. Bring to a boil; reduce heat. Cover and simmer 15 minutes. Stir; cover and let stand until all liquid is absorbed.

  2. Spoon into bowls. Pour a little of the remaining almondmilk over the quinoa. Top with berries and drizzle with honey.
