Can Almond Breeze® be used for baking and in recipes?

Almond Breeze® can be used in just about any recipes calling for traditional dairy milk. It can be used in baking, soups and sauces, as well as heated up for hot drinks, etc. We do not, however, recommend Almond Breeze for use in instant pudding.

What is the carton made of?

Refrigerated Almond Breeze® is packaged in either gable-top 64 fl oz cartons with a white plastic pour spout fitment, or screw-capped HDPE plastic 96/10 fl oz jug/bottle. All container materials are made from FDA approved virgin materials and an oxygen barrier designed for extended shelf life applications.

Shelf-stable Almond Breeze® cartons are a laminate of three materials: high-quality paperboard, polyethylene, and aluminum. Paperboard provides stiffness and strength to the product. Polyethylene provides a tight seal for the innermost and outermost layer of the carton. Aluminum forms a barrier against oxygen and light which helps preserve product without refrigeration and/or added preservatives. There is no leaching of aluminum or aluminum components through the plastic layer.

Are Almond Breeze® cartons recyclable?

Both shelf stable and refrigerated cartons along with milk and juice cartons are recycled through a simple, well-established process called ‘hydrapulping.’ The high-quality fiber is used in the production of paper products such as tissue and paper towels and fine writing paper. In some cases, the plastic / foil residual is being recycled into high-end plastic lumber products.

Nearly 12 million households in 26 states in the US have the ability to recycle shelf stable packages and milk and juice cartons curbside and the numbers keep growing.

Check with your local recycling center to confirm that the container is recycled in your area. Almond Breeze® cartons can be recycled after removing plastic screw caps or plastic spout.

Why do I need to shake the product?

Shaking Almond Breeze® before serving helps to maintain product consistency. Over time, ingredients in Almond Breeze®such as cocoa powder and calcium may settle to the bottom of the carton.

Can I freeze Almond Breeze®?

No. Freezing Almond Breeze® causes the product to separate irregularly and greatly reduces the consistency of the product upon thawing.

Can I drink Almond Breeze® beyond the “use by” or “best before” date?

No, for best quality we recommend consuming REFRIGERATED Almond Breeze® before the “Use By” date and SHELF STABLE Almond Breeze® before the “Best Before” / "Best if Used By" date, and within the recommended time frame after opening, as discussed above.

Why is the “use by” date on refrigerated Almond Breeze® longer than some dairy milks?

Refrigerated Almond Breeze® is made using sophisticated equipment in an Ultra Pasteurization process utilizing very high heat for a very short period of time. Ultrapasteurized product, when packed in a specially designed protective carton, results in an extended shelf life.

How should I store Almond Breeze®?

Unopened REFRIGERATED Almond Breeze® should be stored at a temperature of 35 to 41°F up until the “Use By” date printed on top of the carton. Keep REFRIGERATED Almond Breeze® in the middle of your refrigerator to prevent possible freezing. Avoid refrigerator door storage as it tends to be the warmest part of the refrigerator. REFRIGERATED Almond Breeze is perishable and will spoil if not refrigerated.

Unopened SHELF STABLE Almond Breeze® can be stored in your pantry at room temperature up until the “Best Before” or ""Best if Use By"" date printed on top of the carton. Once opened, SHELF STABLE Almond Breeze® must be refrigerated and used within 14 days or it will spoil.

How soon should I use Almond Breeze® after I open it?

After opening, REFRIGERATED Almond Breeze® should be used within 14 days and SHELF STABLE Almond Breeze® should be used within 14 days. Because Almond Breeze® does not contain preservatives, it is susceptible to bacteral growth such as mold after being opened for a prolonged period of time at room temperature. Blue Diamond does not recommend extending the Refrigerated “Use By” or Shelf Stable “Best Before”/ "Best if Used By" time frame of Almond Breeze® and Blue Diamond will not guarantee the quality of the product beyond this recommended time frame.

How can I tell if the product turns bad?

Almond Breeze® products have a mild and pleasant aroma. If your Almond Breeze® does not look, smell or taste the way it should, it may be spoiled. Signs of spoilage include:

  • The carton looks abnormally bloated
  • When opened, product appears to be moldy, curdled and/or slimy
  • The color has changed
  • The product has an off odor or smells like sour milk
  • The product texture has changed and is not smooth and creamy

Can I use Almond Breeze® as an infant formula?

No. Almond Breeze® is not designed for the replacement of breast milk or infant formula.

Is the carton microwavable?

No. Almond Breeze® cartons are not microwave safe.

Does Almond Breeze® contain any eggs?

No, Almond Breeze® does not contain any egg ingredients.

Is there a difference beyond temperature between the refrigerated Almond Breeze® and the non-refrigerated product?

Both are produced in commercially closed sterilization processes. The shelf-stable products are produced on aseptic production lines – the same as other non-dairy milk alternatives. The refrigerated product is produced in a dairy process, without using any dairy ingredients.

Both processes run at high temperatures – the aseptic, however, remains at a high temperature for a longer duration than the refrigerated product.

The packaging for the shelf-stable product is called tetra-pak and is designed for shelf stability of the unopened product for an extended period of time. The refrigerated product's packaging, on the other hand, is not constructed for shelf stability and must be refrigerated at all times. The same recipes apply for both Shelf-Stable and Refrigerated Almond Breeze® varieties.

Are Almond Breeze® products pasteurized?

Yes. Shelf stable Almond Breeze® is produced via a process called ‘aseptic’. The aseptic process is a closed process and is a form of pasteurization and commercial sterilization which utilizes a very high temperature as required by federal regulations.

Refrigerated Almond Breeze® is produced via ultra-pasteurized HTST (High Temperature, Short Time) process. Ultra high heat eliminates all viable pathogens to ensure product is safe. The Ultrapasteurized product when packed in a specially designed protective packaging results in an extended shelf life (ESL).

Does Almond Breeze® contain any soy?

No. All Almond Breeze® products are soy-free. They do not contain any soy ingredients or soy derivatives.

Is Almond Breeze® kosher?

Refrigerated Almond Breeze® is certified Kosher OU-D, meaning they are dairy free products made on heated equipment that may also be used for dairy products. Blue Diamond uses stringent equipment cleaning and testing procedures to ensure that products made on dairy equipment are dairy-free. For individuals following orthodox kosher rules, dairy-free products processed on heated equipment also used for dairy may not be eaten together with a meat product. Refrigerated Almond Breeze is safe for individuals with dairy allergies.

All Shelf Stable Almond Breeze® products are certified Kosher OU meaning that all ingredients are kosher certified containing neither meat nor dairy ingredients or derivatives.

Both Refrigerated and Shelf Stable Almond Breeze® are safe for individuals with dairy allergies.

Where are the almonds used in Almond Breeze® grown?

The almonds are grown in orchards by our grower co-operative members in California.

Does Almond Breeze® container contain Bisphenol A (BPA)?

No. Our suppliers have confirmed that they do not use BPA in their packaging materials.

In what country is Almond Breeze® produced?

Products are produced in Blue Diamond approved manufacturers across the United States.

How do you make the Almond Breeze® so creamy without adding dairy ingredients?

Almonds naturally have good fat that provides for a naturally creamy texture. Blue Diamond has developed product formulas that deliver a mild tasting almondmilk with a smooth and creamy texture. Almond Breeze® is made with carefully selected almonds and quality ingredients which when combined and processed in the proper ratios results in truly unique product.

Can I order refrigerated Almond Breeze® directly from Blue Diamond growers?

No, the refrigerated Almond Breeze® products are not available directly from Blue Diamond Growers.

What is “Dutch Process Cocoa?”

Blue Diamond uses “Dutch Process” cocoa in Almond Breeze® Chocolate products. The term “Dutch Process” refers to cocoa beans that have been treated with alkali to neutralize acidity, improve color and enhance flavor.

Does Almond Breeze® contain any preservatives?

It is required by law for food manufacturers that use preservatives in their foods to declare them in the ingredient statement. Blue Diamond does not use any preservatives in Almond Breeze® products.

Is the water in Almond Breeze® fluorinated?

No, the potable water used in Almond Breeze® is not fluorinated.

What is the source of fat in Almond Breeze®?

The fat found in Almond Breeze® comes primarily from the almond oil naturally occurring in almonds with small traceable amounts from vegetable oil found in the vitamin and sunflower lecithin ingredients. Our Almondmilk Coconutmilk Blend and Almondmilk Cashewmilk Blend varieties also contain fat from the cashews and coconut cream.

Does Almond Breeze® contain MSG?

Blue Diamond does not add MSG (monosodium glutamate) to our products.

Does Almond Breeze® handle other tree nuts in the manufacturing facilities?

Yes, Almond Breeze® manufacturing facilities also handle coconut and cashew. All products are produced in a stringent allergen control environment to ensure that there is no cross-contamination in finished goods.

Does Almond Breeze® contain wheat or gluten?

No. Almond Breeze® products are wheat and gluten free.

Does Almond Breeze® contain any peanuts?

No, Almond Breeze® does not contain peanuts.

Is Almond Breeze® made in a peanut free plant?

Almond Breeze® is produced in a stringent allergen control environment.

Does Almond Breeze® contain any dairy ingredients?

No. All Almond Breeze® products are dairy-free. They do not contain lactose or casein.

Are the almonds you use non-GMO?

Almonds are not made using bioengineering.

What are MCFA’s?

MCFA’s stand for Medium Chain Fatty Acids, a type of fat in coconut.

Are Almond Breeze® products non-GMO?

All Almond Breeze® varieties, except the Hint of Honey varieties, are Non-GMO Project Verified.

Does the cocoa used in Almond Breeze® chocolate contain dairy?

No. It does not contain dairy.

What is the coconutmilk blend used in the Almond Breeze® Almondmilk Coconutmilk blends?

We use coconut cream to make Almond Breeze® blends. Coconut Cream is the emulsion of water and coconut oil extracted from the coconut meat by physical pressing. The coconut cream is physically pressed from the coconut meat without chemicals.

Can you add Blue Diamond Almond Flour to beverages and drink it directly?

Blue Diamond Almond Flour will not dissolve in a liquid, so it will be a bit grainy and not smooth to drink. However, almond flour is safe to be consumed as packaged.

Do almonds get defatted (oil extracted) in the process of making Blue Diamond Almond Flour?

The almonds are not de-fatted before grinding. Blue Diamond Almond Flour is made only from ground blanched almonds.

I can eat almonds but am highly allergic to other tree nuts. Is Blue Diamond Almond Flour safe for me to consume?

What ratio do I use when replacing all-purpose flour with Blue Diamond Almond Flour?

Please refer to Blue Diamond Almond Flour Recipes. These recipes have the exact amounts of Almond Flour to be used in place of other flours. However, if you are preparing a dish not included in the recipes above, you may need to experiment.

Usually up to 25% of All-Purpose Flour in your recipe may be replaced with Almond Flour without having to make further changes. For 100% replacement of wheat flour for Blue Diamond Almond Flour, you may need to experiment with the addition of an extra egg or xanthan gum.

Can you please describe the exact process the almonds go through to become flour?

Almonds are blanched (passed through boiling water) to remove the skins and then ground into a very fine texture.

Can Blue Diamond Almond Flour be used for cookies?

Sure. Our Almond Flour can be used in most recipes to replace wheat flour. You may have to change other ingredients, so experiment.

For example: Usually an extra egg or two are added depending on the dish being prepared to impart a better texture. You may also refer to the Blue Diamond Almond Flour Recipes cookbook for delicious recipes.

My recipe calls for 1 lb. of blanched almond flour. How many cups of Blue Diamond Almond Flour would equate to that?

You can use equal parts of Blue Diamond Almond Flour for the almond flour called for in your recipe. 1 pound of almond flour equates to 4 cups of almond flour.

How many almonds does it take to make one cup of Blue Diamond Almond Flour?

It approximately takes ¾ cup of blanched whole almonds to make 1 cup of Blue Diamond Almond Flour.

Are Blue Diamond® Baking Mixes gluten-free?

Yes, Blue Diamond® Baking Mixes do not contain any gluten-containing ingredients.
All products use only supplier verified free of gluten-containing ingredients and are produced in registered food facilities with extensive food safety and quality programs including GMPs, allergen control, sanitation, and HACCP to ensure that products are not cross contaminated with gluten allergens during production. Each product is tested for gluten-free verification.

Do Blue Diamond® Baking Mixes contain peanuts?

Blue Diamond® Baking Mixes are produced in a facility that is peanut free. We do not process, manufacture, store, or handle peanuts or peanut products in the facility.

Do Blue Diamond® Baking Mixes contain other tree nuts?

No, Blue Diamond® Baking Mixes do not contain other tree nuts. Almond is the only tree nut being used in the product.

Are Blue Diamond® Baking Mixes considered vegan? Why not?

Blue Diamond® Baking Mixes do not contain any ingredients derived from animals. However, the products are not vegan certified as the cane sugar is filtered through bone char, a common manufacturing process in the sugar industry.

Are any of the Blue Diamond® Baking Mixes keto friendly?

No, Blue Diamond® Baking Mixes are not Keto friendly as they contain sugar and other carbohydrates restricted in the Keto diet.

What type of sugar do Blue Diamond® Baking Mix products contain?

Blue Diamond® Baking Mixes contain white sugar, brown sugar and powdered sugar. See individual product ingredient statements. All sugars are derived from sugar cane.

Is the Blue Diamond® Baking Mix bag or box recyclable?

The interior bag is not recyclable. Please be mindful when discarding the bag and throw it away in an appropriate trash receptacle.
The cardboard carton is recyclable.

Can I add Almond Breeze® instead of water when preparing my Blue Diamond® Baking Mix?

Yes, you may add Unsweetened Almond Breeze® in place of water in the chocolate cake, yellow and brownie mixes. It is recommended to line baking pans with parchment to allow the product to more easily be removed from the pan.

Can I bake Blue Diamond® Baking Mixes in the microwave?

The products are designed to be baked in a conventional oven. It is not recommended to make the products in the microwave.

How do I know if my pan is dark metal or light metal?

Light metal pans can be shiny or matte finish and are silver or grey in color. Dark metal pans are brown, very dark grey or black in color.

What time and temperature do I bake my Blue Diamond® Baking Mix?

Choose 325°F or 350°F based on the type of pan being used. Temperature recommendations vary by product. Each Blue Diamond® Baking Mix has a unique table of estimated bake times based on the type of pan being used and are provided for guidance. Always monitor the product while baking and check to ensure it is completely baked by inserting a toothpick in the middle. When the toothpick comes out clean, your product is done.

Why is the cocoa used in Blue Diamond®Baking Mixes processed with alkali?

Also known as “Dutch Process” cocoa, the cocoa beans have been treated with alkali to neutralize acidity, improve color and enhance flavor.

Do I have to change the preparation of my Blue Diamond® Baking Mixes for elevations over 3000 feet?

Blue Diamond® Chocolate Chip Cookie Mix and Blue Diamond® Chocolate Brownie Mix can be made as directed on the package at any elevation.
Blue Diamond® Chocolate Cake and Blue Diamond® Yellow Cake Mixes require the following preparation modifications.

How should I store Nut-Thins®?

Our Nut-Thins® are packaged in air tight containers to preserve freshness. Once the packages are opened the crackers should be consumed within one to two weeks. Protect the crackers against absorption of moisture and odor by keeping the package closed in storage.

Are Nut-Thins® in direct contact with the aluminum in the inner bag?

The inner bag aluminum is sandwiched between layers of plastic. Nut-Thins® are in contact with FDA approved food grade plastic film.

Are any of the ingredients used in Nut-Thins® derived from corn?

Yes, some of the ingredients used in the seasonings and flavors are derived from corn.

Is the butter flavor used in Nut-Thins® derived from dairy?

Yes, the butter flavor is derived from dairy milk.

Are Nut-Thins® wheat and gluten free?

The ingredients used in Nut-Thins® do not contain gluten. Nut-Thins® are processed in a facility that is certified by the Gluten Free Certification Organization. In addition, Blue Diamond has every production lot of Nut-Thins® tested and certified for gluten.

Are the inner foils bags recyclable?

No, the inner bag is made up of layers of plastic and aluminum foil and is not recyclable.

Do Nut-Thins® contain white or brown rice?

Non allergenic, gluten free, white rice is used in the making of Nut-Thins® crackers and brown rice is used in Artisan Nut-Thins®.

How do I toast whole natural or raw almonds?

Spread almonds uniformly in a shallow layer on an ungreased baking pan. Bake in a preheated oven at 325-350°F for 15-30 minutes until the internal nut color is golden in color. Stir occasionally for an even roast. Remove from the oven and allow to cool. Almonds will continue to roast slightly and darken while cooling.

Do you use “soy” in your products?

Some products use soy, such as in soy sauce, or soy derivatives, such as hydrolyzed soy protein and/or lecithin as food additives for integrity and quality. As soy is a food allergen, any product containing it will indicate "soy" in the ingredient declaration and/or "contains" statement on the label.

Do Blue Diamond products contain MSG?

Blue Diamond does not add MSG (monosodium glutamate) to our products.

Where does the “Smoke” in your Smokehouse® Almonds come from? Is it vegan?

Our Smokehouse® almonds contain an FDA approved natural smoke flavor derived from the burning of hickory wood and is considered vegan.

Does Blue Diamond sell organic products?

We currently do not offer organic products.

Why do some of your seasoned products such as Smokehouse® have fewer carbohydrates per serving than your Whole Natural?

Products such as Smokehouse contain ingredients other than almonds. These additional ingredients have fewer carbohydrates than the almonds resulting in a product with fewer carbohydrates per serving overall.

Is the salt used in your products iodized?

The salt is not iodized.

Are Blue Diamond products “peanut free?”

Blue Diamond branded products produced in our facilities are peanut free. We do not process, manufacture, store, or handle peanuts or peanut products in our facilities.

Are Blue Diamond almonds genetically engineered (GMO)?

No. Blue Diamond uses California almonds grown by our grower co-operative members without the use of genetic engineering or gene manipulation. The varieties of almonds available were developed using traditional agricultural breeding techniques.

Are Blue Diamond products “gluten free?”

Most of our products do not contain ingredients derived from wheat or other gluten grains. The following Blue Diamond products contain gluten:

How do I blanch or remove the skin from whole natural almonds?

Add almonds to a sauce pan containing water. Bring the water to a boil for about one minute. Remove the almonds from the heat and let stand for several minutes. Pour the almonds and hot water through a colander. Rinse the hot almonds with cold water until they are cool and can be safely handled. Remove the skin by pinching the almond between your thumb and forefinger. Dry the blanched almonds in a 250°F oven until crisp.

How should I store Blue Diamond almonds?

Our snack almonds are packaged in air tight containers to preserve freshness. Once the packages are opened the almonds should be consumed within one to two weeks. Storing almonds in the refrigerator will extend the shelf life after opening to about four weeks. When storing products in the refrigerator use sealed containers to protect against absorption of moisture and odor.

Some of your products contain the ingredient “maltodextrin.” Does maltodextrin contain gluten?

While some forms of maltodextrin can contain gluten, we utilize maltodextrin made from corn, and it does not contain gluten.
