Curried Rice Salad

Ingredients

  • 1 cup Blue Diamond® Whole Natural Almonds, chopped
  • 1 tablespoon butter
  • 1/3 cup mayonnaise
  • 1 clove garlic, chopped finely
  • 1 tablespoon curry powder
  • 1 tablespoon lemon juice
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon coriander
  • 2 drops red pepper sauce
  • 3 cups hot cooked rice
  • 1 red bell pepper, diced
  • 1/2 cup sliced green onion
  • 1/2 cup raisins, soaked in boiling water for 20 minutes and drained
  • 1/4 cup shredded coconut, fresh or packaged

Directions

Sauté almonds in butter until crisp; drain and reserve. Combine next 9 ingredients. Stir into hot, cooked rice. Fold in bell pepper, green onions, raisins, and coconut. Chill. Just before serving, fold in almonds.

Makes 6 to 8 servings.
