Curried Rice Salad
Ingredients
- 1 cup Blue Diamond® Whole Natural Almonds, chopped
- 1 tablespoon butter
- 1/3 cup mayonnaise
- 1 clove garlic, chopped finely
- 1 tablespoon curry powder
- 1 tablespoon lemon juice
- 1/2 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon coriander
- 2 drops red pepper sauce
- 3 cups hot cooked rice
- 1 red bell pepper, diced
- 1/2 cup sliced green onion
- 1/2 cup raisins, soaked in boiling water for 20 minutes and drained
- 1/4 cup shredded coconut, fresh or packaged
Directions
Sauté almonds in butter until crisp; drain and reserve. Combine next 9 ingredients. Stir into hot, cooked rice. Fold in bell pepper, green onions, raisins, and coconut. Chill. Just before serving, fold in almonds.
Makes 6 to 8 servings.
